FOR DECADES, TWO FARMS IN
Sullivan County have supplied fatty duck liver
— also known as “foie gras” — to diners in New York City who are willing to pay a premium for the rich, buttery staple of French cooking.
Beginning November 25, 2022, however, a new law driven by concerns over animal cruelty, passed in the City Council by a margin of 42-6, would ban the sale in the city of animal products produced by force feeding, as is the foie gras in Sullivan County. The farms say the impact could be devastating.
