Blue Hill — which recently received a two-Michelin-star rating — puts forward a singular social and gastronomic mes- sage: Make food that’s memorable, deli- cious, originally presented, ethical, and educational. Situated on 80 acres of pas- ture and cropland, its theatrical four-hour tasting menu (expect 25–30 dishes) is the truest iteration of a farm-restaurant symbiosis. It’s expensive ($278 per per- son), but not insanely priced when you re- alize you’re paying for dinner and a show.

Crabtree’s Kittle House

With a kitchen that has focused on lo- cal ingredients and area farmers since before it was food-industry-fashionable to do so, plus polished service and a Wine Spectator Grand Award-winning bottle list, dining here is mannerly and a bit dressy, yet relaxed.
