no imitations — experimenting with our homemade smoker to balance the smoky, savory, and sweet flavors. He tried thousands, and we mean thousands, of different tempera- tures, cooking times, and spice combinations. With each effort, he came one step closer
to his crowned achievement — the first New York Style Barbecue.
