Vince says, noting that he does his own contacting, “We have a gravity water line leading from the spring house [at the other end of the property].”
Running through an old eight-foot watering trough whose origins were once half of a compressed-gas canister, the water is used for cooling wine while entertaining. Overflow goes into the farm pond.
Somewhat small, the Moros’ cellar is a cozy place for entertaining, and it doesn’t hold
the majority of the couple’s wine collection. In addition to a few partially filled wine racks, there’s a wooden pupitre traditionally used for turning inverted champagne bottles before the fermentation-induced sediment
is disgorged. Here, it serves as bottle storage. As Vince points out, the back wall can easily be breached if he sets his mind to expanding. “It’s an inspiration for me to keep digging,” he says. TH
