to as Grasparosa di Castelvetro, is the only sub-variety grown in breezy hillside vineyards. Many experts consider it the most “winelike.”
Darker in color and firmer, its full body and tannins are closer to a dry red wine than
the others, and are mirrored by dark berry, black cherry and plum flavors and a mildly bitter twist on the finish. The overall sensation is full bodied and rounded, making
it more at home with tomato-based pastas like Bolognese, pizza, or tortellini
in brodo.
Lambrusco Salamino do Santa Croce is the most widely planted, about 10,000 acres spread across the region. Sort of a hybrid
of the other two, it has the aromas of Sorbara and strong flavor and personality
of Grasparosa. The rich flavors and creamy texture are often blended with Sorbara in wines of the Sorbara DOC.
Two more DOCs of note are Modena and Reggio, covering large swaths of their respective provinces. Flexible regulations allow for the inclusion of many Lambrusco varieties in varying amounts, so style and quality are hard to pin down.
When shopping for Lambrusco be sure to carefully read the labels, all the info you need should be right there. IAH
